Exceptionally gifted baker experience in large-scale production of a variety of bakery goods for institution use; maintaining the quality of breads and pastries produced and assisting in supervising and training employees, inmates and patients engaged in bakery.SKILLS • Hands-on experience in recruitment, training, and direction of bakery staff • Excellent knowledge of baking including the baking time, methods of mixing, temperatures, flavors, shortenings and maintenance of bakery equipment • Able to observe sufficient precautions of safety • Very good communications and interpersonal skills • Able to operate bakery equipment and to maintain the required production • Able to bake large scale with the knowledge of modern bakery equipment • Outstanding knowledge of food hygiene, HACCP programs, and safety standard • Ability to discipline, mentor and encourage all assigned staff members efficiently
